Tasting Note
Lush, honeyed apricot, candied citrus, orange blossom, and ginger with caramel and toasted vanilla from oak. Intense botrytised notes, vibrant acidity and a decadent, citrus-sparked, very long perfumed finish.
Food Pairing
Foie gras, blue cheese (Roquefort), crème brûlée, fruit tarts; Asian: Peking duck, spicy Thai curry, mango sticky rice, dim sum with sweet sauces.
Production Method
Hand-harvested in multiple selective passes to pick botrytised grapes (Botrytis cinerea); fermented in oak and aged in French oak barrels, producing a concentrated, high-residual-sugar sweet wine.
