Tasting Note
Luminous honeyed apricot, pineapple and mirabelle with saffron, orange peel and toasted almond. Silky, opulent and concentrated yet brightened by racy acidity; long saline-citrus finish with vanilla and light spice.
Food Pairing
Foie gras, pâté, blue cheese (Roquefort), crème brûlée, fruit tarts; seared scallops, glazed pork belly, Peking duck, spicy Thai curry, mango sticky rice.
Production Method
Late-harvest, botrytised (noble rot) Sémillon/Sauvignon Blanc; hand-harvested in multiple passes, fermented and aged in oak barrels (c.2–3 years) to retain high residual sugar.
