Tasting Note
Perfumed red cherry and raspberry, violet, forest floor and gentle spice; mid-weight, bright acidity, fine/silky tannins and a focused, slightly austere finish.

Western: roast duck, coq au vin, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu, miso-glazed black cod, shiitake/mushroom hot pot.

Production Method
Organically farmed and biodynamic (domain-wide); hand-harvested, native/controlled fermentations with some whole-cluster use and maturation in French oak barrels.
