Tasting Note
Fresh peach and apple with lemon-citrus lift, toasted hazelnut and butterscotch from oak, underlying saline-mineral core, racy acidity and medium body finishing long and stony.

Production Method
Organically/biodynamically farmed monopole; soft whole-cluster press, cold settling, fermentation begins in stainless steel and finishes in French oak; ~16 months barrel ageing (~25–30% new), brief tank rest, bottled with minimal fining.
