Tasting Note
Fresh peach and apple with lemon-citrus lift, toasted hazelnut and butterscotch from oak, underlying saline-mineral core, racy acidity and medium body finishing long and stony.

Food Pairing
Western: roast chicken, grilled trout or sole, lobster with butter sauce, creamy cheeses (Brie, Époisses). Asian: miso-glazed black cod, tempura prawns, sushi/pressed tuna, mild Thai green curry or steamed dim sum.

Production Method
Organically/biodynamically farmed monopole; soft whole-cluster press, cold settling, fermentation begins in stainless steel and finishes in French oak; ~16 months barrel ageing (~25–30% new), brief tank rest, bottled with minimal fining.

Domaine de la Vougeraie (Boisset family) consolidated fine Burgundy holdings in 1999; Clos du Prieuré is the domaine's east-facing monopole (≈0.83 ha) planted mostly in the 1980s, farmed organically/biodynamically.
