Tasting Note
Mineral-driven Chardonnay with lemon-lime, green apple, hazelnut, buttered pastry, subtle smoke and spice. Racy acidity, medium-plus body and fine phenolic grip; long, slightly chalky finish.

Food Pairing
Western: roast chicken, butter-poached lobster, creamy mushroom risotto, soft cheeses (Brie). Asian: miso-glazed cod, Cantonese steamed fish, shrimp tempura, sushi (salmon/tuna), Thai coconut chicken curry.

Production Method
Certified organic/biodynamic viticulture; whole-bunch pneumatic pressing, short settling; fermentation begins in stainless steel and finishes in French oak; aged ~12–14 months (≈20% new); periodic lees stirring; light filtration.

Monopole 'Le Clos du Prieuré' (≈0.8258 ha), east-facing, walled plot beside the Vouge stream; vines planted 1984–1991. Domaine de la Vougeraie (Boisset family) practices organic since late 1990s and biodynamic farming from 2001.
