Tasting Note

Crisp citrus and white orchard fruits (lime, green apple) with white pepper, pear and hazelnut; pronounced flinty minerality and saline finish. Focused, medium-bodied with bright acidity and a lingering mineral aftertaste.

Western: lobster, grilled/roast chicken (eg. poulet de Bresse), chicken with morels, foie gras, sea bass, salmon. Asian: sushi/sashimi, tempura prawns, miso-glazed black cod, Thai steamed fish with lime, Chinese steamed fish with ginger & scallion.


Production Method

Certified organic/biodynamic viticulture; whole-cluster pressing, no inoculated yeasts or enzymage; fermented/aged ~16 months in French oak (c.25% new) then ~2 months in stainless steel.

Domaine de la Vougeraie (founded 1999 by the Boisset family) farms ~34 ha across the Côte de Nuits and Côte de Beaune; known for organic/biodynamic practices and precise winemaking.
