Tasting Note
Perfumed red fruits (cherry, raspberry), violets and rose petal, garden herbs, light blackcurrant, baking spice, gentle oak and earthy mineral finish. Medium-bodied and elegant.

Food Pairing
Western: roast chicken, duck, mushroom risotto, pork tenderloin, lamb, charcuterie and soft cheeses. Asian: miso-glazed salmon, Peking duck, teriyaki pork, Korean BBQ (pork/beef), mushroom-based Japanese dishes, bao with roasted pork.

Production Method
Organic/biodynamic viticulture; hand-harvested grapes, partial whole-cluster fermentation, matured ~10–12 months in French oak barrels.
