Tasting Note
Perfumed red fruits (raspberry, redcurrant, cherry) with sandalwood, earth, spice and minerality. Supple, mid-weight palate, well-meshed tannins and lively acidity; compact finish built for medium-long aging.

Food Pairing
Roasted lamb, duck breast, mushroom risotto, beef bourguignon; Asian pairings: Peking duck, char siu pork, teriyaki beef, miso-glazed aubergine, shiitake-based dishes.

Production Method
Organic/biodynamic viticulture. Partial whole-cluster fermentation with cold pre-fermentation soak; ~23 days maceration. Aged ~13 months in oak (approx. 45% new). Minimal filtration, no fining.

Domaine de la Vougeraie (Boisset family) created 1999; ~34 ha across the Côte d’Or. Converted to organic/biodynamic farming; Clos de Thorey is the domaine’s 3.077 ha monopole in Nuits-St-Georges.
