Tasting Note
Silky, polished Pinot Noir showing black cherry, raspberry, wild strawberry, rose petal, forest floor and subtle oak spice. Fine acidity, supple tannins and a mineral, tomato-leaf finish with lingering red-fruit persistence.

Food Pairing
Western: roast duck, coq au vin, mushroom risotto, beef bourguignon, roasted pork; Asian: Peking duck, miso-glazed cod, teriyaki chicken, Korean bulgogi, shiitake stir-fry.

Production Method
Hand-harvested, organic/biodynamic viticulture; partial whole-cluster fermentation (~50% in 2020), cold pre-fermentation maceration, aged 12–16 months in French oak (approx. 30% new).
