Tasting Note
Perfumed red-fruit core of cherries, raspberries and mulberry with floral violet and rose petals, underpinned by subtle earth, smoke and minerality; refined tannins, bright acidity and a very long, elegant finish.

Roast duck or canard à l'orange, beef entrecôte, game birds (pigeon, quail), mushroom risotto; Asian: Peking duck, miso-glazed black cod, soy‑and‑ginger mushroom stir‑fry, char siu with steamed buns.

Production Method
Organic then biodynamic viticulture; 100% whole‑cluster fermentation, cold pre-ferment maceration, gravity filling; aged 12–16 months in French oak (c.25–30% new).
