Tasting Note
Crisp citrus and green apple with white flowers, toasted hazelnut and wet-stone minerality. Creamy mid-palate, bright acidity and a saline, lingering citrus-tinged finish (balanced, medium-plus body).

Western: roast chicken, butter-poached lobster, grilled sea bass, creamy pasta, aged Comté. Asian: tempura, sushi/sashimi, steamed white fish with ginger and scallion, miso-glazed cod, light Thai fish dishes.

Production Method
Organic/biodynamic viticulture; pneumatic whole-cluster pressing, 24h settling, fermentation started in stainless steel and finished in oak; 14 months élevage in oak (≈20% new), monthly bâtonnage.
