Tasting Note
Ripe black cherry and black currant with raspberry and rose-petal notes; mineral iron, sandalwood spice and a savory, slightly vegetal whole-cluster character. Medium-bodied, firm tannins and a persistent, spicy finish.

Roast lamb, beef bourguignon, duck confit, mushroom risotto, grilled ribeye; Asian: Peking duck, char siu, Korean BBQ (galbi), miso-glazed eggplant, shiitake hot pot.

Production Method
Organic/biodynamic viticulture; partial whole‑cluster fermentation (≈48%); cold pre-fermentation maceration; ~23 days maceration; 16 months élevage in French oak (≈28% new).
