Tasting Note
Citrus (lemon, orange oil), white flowers, baked bread and stone fruit with pronounced mineral/flinty notes; satiny, rich texture, bright acidity, subtle toasty oak and a long, penetrating finish.

Food Pairing
Western: grilled lobster, scallops, roasted chicken with butter sauce, foie gras, aged cheeses. Asian: miso-glazed black cod, tempura prawns, sushi (fatty tuna or salmon), steamed Chinese sea bass with ginger and scallions.

Production Method
Biodynamic/organic viticulture, hand-harvested; whole‑cluster pressing (2.5h), 12h settling; alcoholic and malolactic fermentation in oak; aged ~16 months in oak (≈30% new), short stainless steel rest, light filtration.
