Tasting Note
Perfumed white-peach and citrus aromas with quince, white flowers, hazelnut and a honeyed, mineral core. Medium-bodied with crisp acidity, creamy texture and well-integrated oak, finishing long and citrus-lime driven.
Food Pairing
Western: lobster with beurre blanc, seared scallops, roast chicken, creamy cheeses. Asian: sushi/sashimi, miso-glazed cod, Cantonese steamed whole fish, delicate Thai seafood dishes.
Production Method
Organically farmed, biodynamic parcels; manual harvest, whole-cluster pressing, native-yeast fermentation (steel to oak), 16 months in French oak (≈20% new) with bâtonnage, minimal sulphur and little or no racking.
