Tasting Note
Fresh nectarine and lemon with toasted almond, hazelnut and dried-honey notes; creamy mid-palate, lively mineral acidity and a gently toasty, savory finish. Medium-bodied and vibrantly textured.

Food Pairing
Western: roast chicken, mushroom risotto, buttered lobster or creamy pasta. Asian: miso-glazed salmon, seared scallops, tempura, light soy-based sashimi (tuna), Cantonese roasted pork.

Production Method
Hand-harvested; whole-bunch pneumatic pressing (2.5h), 12h settling. Fermentation begun in vat, finished in oak; aged 16 months in barrels (17% new), no racking, light fining and filtration.
