Tasting Note
Citrus peel, pear and apricot with chalky minerality, subtle white-flower notes and a touch of butter/toast from oak; medium-bodied, bright acidity and a clean, stony finish.

Western: roast chicken, grilled sea bass, lobster in butter sauce, creamy mushroom risotto, soft cheeses. Asian: miso-glazed cod, seared salmon sushi, tempura, soy-ginger glazed fish, milder Thai coconut curry.

Hand-harvested; biodynamic viticulture; pneumatic pressing; indigenous-yeast fermentation in stainless steel and French oak; partial malolactic and élevage on fine lees.
