Tasting Note
Opulent yet precise: white peach, lemon zest, toasted hazelnut, acacia blossom, wet stone and chalky minerality; rich mid-palate, vibrant acidity and a long, saline finish.

Food Pairing
Western: lobster in beurre blanc, roasted chicken with mushrooms, creamy pasta, aged Comté or Brie. Asian: miso-glazed black cod, tempura prawns, Cantonese steamed fish, richer sushi (e.g., toro).

Production Method
Whole-cluster pneumatic pressing, cold settling; fermented in French oak, aged ~18 months (≈33% new oak) with monthly bâtonnage; light filtration before bottling.
