Tasting Note
Gilded Chardonnay with citrus zest, white apple, stone fruit, jasmine and white nougat; subtle vanilla and toasted oak, pronounced minerality, creamy texture, medium-full body and a long, elegant finish.

Food Pairing
Western: roast chicken, lobster, creamy mushroom pasta, aged soft cheeses. Asian: miso-glazed fish, sushi (rich cuts), tempura, creamy Thai or Cantonese seafood dishes.

Production Method
Organic/biodynamic approach; hand-harvested grapes, spontaneous fermentation, ~12 months in used French barriques then additional maturation in stainless steel and bottle aging.
