Western: foie gras, mature/blue cheeses, roast pork, tarte Tatin. Asian: spicy Thai or Sichuan dishes, rich Japanese cuisine (sushi with fatty fish), Peking duck, mildly spiced Indian curries.

Production Method

Hand-harvested, sorted grapes; fermentation with indigenous yeasts in large oak (demi-muids/barrels) with extended lees contact and barrel ageing.
