Tasting Note

Bright citrus blossom, white peach and pear skin with tropical notes, beeswax and wet-stone minerality. Crisp, driving acidity, ripe texture and a saline, persistent citrus-peel finish.

Food Pairing

Western: grilled lobster, roast chicken with lemon, goat cheeses, foie gras; Asian: curried prawns, tempura or sushi/sashimi, spicy Thai green curry, Chinese steamed fish with ginger & scallions.

Production Method

Hand-harvested, indigenous-yeast fermentation; aged ~12 months in large and varied oak vessels (and some glass tanks), on lees with minimal bâtonnage; bottled with little filtration and low SO2; fully fermented to dry.
