Tasting Note

Powerful, aromatic dry white: citrus and quince, exotic pineapple and lychee, honeyed and menthol notes, smoky/iodine minerality and saline finish; bright acidity with concentrated, precise texture.


Food Pairing

Western: grilled lobster, scallops, sea bass, foie gras terrine, blue and aged cheeses. Asian: sushi/sashimi, Thai curry, spicy prawn curry, steamed shellfish with citrus and ginger.


Production Method

Hand-harvested; fermented in new oak 'cigar' barrels (320L) and stainless steel, indigenous yeasts; ~12 months barrel ageing; biodynamic/organic vineyard practices.
