Tasting Note
Explosive citrus and tropical aromas (pineapple, clementine, quince) with saline/mineral and menthol notes. Dense, focused palate of stone fruit, bright acidity and spice, finishing long, stony and iodic.

Western: scallops, oysters, grilled prawns, seafood pasta, roasted/herb chicken, soft goat cheeses. Asian: sushi/sashimi, miso‑glazed black cod, Thai green curry, tandoori chicken, spicy Sichuan or curry dishes.
Production Method
Fermented and aged in large oak vessels including demi-muids and 'cigar' barrels; ~12 months élevage in wood, blended after maturation and lightly filtered before bottling.
