Tasting Note

Lush, honeyed tropical fruits (pineapple, mango), quince and citrus confit with vibrant racy acidity and saline minerality. Silky, mouth-coating sweetness balanced by bright freshness and a long, spice-tinged finish.

Foie gras (terrine or seared), Roquefort or other blue cheeses; fruit tarts, lemon meringue, mango desserts; Asian pairings: spicy Thai or Vietnamese curries, mango sticky rice, hoisin/duck (Peking) dishes.


Production Method

Late-harvest Petit Manseng picked selectively by hand; slow press, indigenous-yeast fermentation and extended élevage 12–18 months in large oak (demi-muids and ‘cigar’ barrels); minimal filtration.

Produced by Domaine Didier Dagueneau (managed by Louis‑Benjamin Dagueneau). Small Jurançon holdings on steep terraced parcels; project started to honour Didier’s legacy with meticulous low-yield viticulture.
