Tasting Note
Aromas of blackcurrant, blackberry, violet, brioche and subtle pencil/shade. Palate is fresh, precise and silky with mineral lift, chocolate and spice notes, grainy yet well-integrated tannins and a long, sappy finish.
Food Pairing
Roast lamb, ribeye or braised short ribs; hard cheeses (Comté, aged cheddar). Asian pairings: Peking duck, char siu, Korean BBQ (bulgogi), spicy Sichuan beef or mushroom hot pot.
Production Method
Hand-harvested (28 Sept–8 Oct). Traditional fermentation with careful maceration; matured in French oak (50% new) for ageing before bottling.
