Garnet with crimson tint; aromas of black and red cherry, wild blueberry, roasted coffee, marzipan, vanilla and subtle tar. Medium–full body, juicy black fruit, silky grainy tannins and a long, chocolate- and liquorice-tinged finish.
Food Pairing
Roasted or grilled red meats, roast lamb, duck breast, game birds, mature cheeses (Comté, aged cheddar); Asian pairings: Peking duck, Cantonese roast pork (char siu), Korean BBQ beef (bulgogi/galbi), braised soy-braised short ribs.
Production Method
Hand-harvested; fermented in stainless and oak vats, then matured ~18 months in French oak barrels (≈50% new) before assembly and château bottling.
