Tasting Note
Vibrant purple sparkling red with aromas of spiced plum, red cherry, mint and Christmas spice. Fine persistent bead, creamy mousse, bright mineral acidity, juicy mulberry and boysenberry fruit with a subtle tannic grip and a long, spicy menthol-tinged finish.
Food Pairing
Spicy Asian curries (red duck curry, Szechuan), Korean BBQ and teriyaki beef; braised ribs, barbecued lamb, roasted duck; charcuterie and aged cheeses (cheddar, manchego).
Production Method
Traditional method (methode traditionnelle) — open ferment, foot-treading and basket-pressing for base wine; tirage added for secondary fermentation; blended non-vintage cuvée.
