Tasting Note
Plush, textural Roussanne: tropical and stone fruits (pineapple, mango, white peach), honeydew, white flowers, macadamia and white pepper. Creamy, savory mid‑palate with focused acidity and a long, spicy, nutty finish.
Food Pairing
Western: roast chicken with herb butter, creamy mushroom pasta, grilled scallops or buttered prawns, pork belly. Asian: prawn & pink grapefruit noodle salad, Thai mango rolls with tamarind, green curry, steamed fish with ginger and soy.
Production Method
Hand-harvested fruit; gentle crush and stainless-steel basket pressing. Fermented in stainless tanks using free‑run juice only; no oak or malolactic fermentation to retain fresh, textural fruit.
