Tasting Note
Ripe red and black fruits (raspberry, plum, blackberry) with violets, thyme, cracked pepper and cedar. Silky yet chalky tannins, savory iron/earth notes and warm spice; long, savory finish.
Food Pairing
Western: grilled ribeye, roasted lamb, BBQ ribs, charcuterie, aged cheddar. Asian: Korean BBQ (bulgogi), Peking duck, char siu pork, Malaysian laksa with beef, Sichuan-style beef or fermented soybean stir-fry.
Production Method
Small-batch grapes fermented separately in open vats with traditional foot-treading; basket-pressed, then matured ~18 months in new and seasoned French oak. Minimal racking; generally unfined and unfiltered.
