Tasting Note
Dense black-plum, blackberry and boysenberry core with black pepper, liquorice, dark chocolate and cedar; ripe muscular tannins, plush texture and a long, spicy finish.

Grilled or roasted beef and lamb, braised short ribs, aged cheddar; Asian pairings: Korean BBQ, char siu, Sichuan-style beef, spicy Malaysian satay.

Production Method
Small-batch fermentations with traditional basket-press (foot-treading used by house style); matured 12–18 months in a mix of new and used French and American oak.
