Tasting Note
Concentrated black and red berry fruits (blackberry, blueberry) with black pepper, anise/licorice, leather, dark chocolate and forest-floor earth. Full-bodied, chewy yet velvety tannins, spicy oak and a long, savory, mineral finish.
Food Pairing
Western: grilled ribeye, lamb chops, roast beef, beef stew, aged cheddar. Asian: Korean BBQ (bulgogi), Sichuan-style beef, char siu, Malaysian/Indonesian rendang, black-bean tofu dishes.
Production Method
Small parcels crushed and fermented in open fermenters with traditional foot treading; partial fermentation stoppage reported; matured 12–18 months in new and used French and American oak; typically not fined or filtered.
