Tasting Note
Dark berry and plum fruit with baking spice, cedar, tobacco and subtle balsamic notes; firm chalky tannins, fresh acidity and a long, savory finish. (≤50 words).

Food Pairing
Western: roast lamb, grilled ribeye, aged Manchego, venison. Asian: Peking duck, char siu, Korean barbecue (bulgogi), mushroom hot pot, sichuan-style beef.

Production Method
Hand-harvested, cold-stored, optical sorting; fermented in oak vats with selected/native yeasts, ~20-day maceration, malolactic in concrete/wood, aged 24 months in French (≈70%) and American oak.
