Tasting Note
Perfumed cabernet with violet, blackcurrant, plum and mulberry, layered with wild thyme, ironstone and dusty chocolate. Fine-grained, powdery tannins, elegant acidity and a long, floral-savory finish.

Production Method
100% old-vine Cabernet; handpicked on a biodynamic ‘flower day’, wild ferment in 300L terracotta amphorae (107 days on skins), then pressed to French oak (66% new) for ~6 months. No added yeasts, acids or fining.
