Tasting Note
Perfumed cabernet with violet, blackcurrant, plum and mulberry, layered with wild thyme, ironstone and dusty chocolate. Fine-grained, powdery tannins, elegant acidity and a long, floral-savory finish.

Food Pairing
Roast beef, grilled lamb, aged cheddar, mushroom ragu; Asian: Korean BBQ, char siu or teriyaki beef, braised beef short ribs, wok-roasted eggplant with soy and garlic.

Production Method
100% old-vine Cabernet; handpicked on a biodynamic ‘flower day’, wild ferment in 300L terracotta amphorae (107 days on skins), then pressed to French oak (66% new) for ~6 months. No added yeasts, acids or fining.
