Tasting Note
Peach-skin pink colour; aromas of apple, strawberry, peach and grapefruit. Clean, fresh palate with violet, rose and liquorice notes, fine natural bubbles, vibrant texture and lively acidity for a persistent, textural finish.

Food Pairing
Western: antipasto, charcuterie, baked Camembert, grilled prawns, ceviche. Asian: sushi/sashimi, tempura, Vietnamese spring rolls, lightly spicy Thai or Southeast Asian salads.

Production Method
Hand-harvested on a biodynamic flower day, whole-bunch basket-pressed, cool native-yeast fermentation in older 500L oak puncheons for ~8 days; hand-bottled early April 2023 while fermentation was active (pét-nat), no additions, minimal intervention, unfiltered.
