Tasting Note
Aromas of white flowers, orange blossom, peach, nectarine, grapefruit, dried pear and vanilla. Tightly bound, textural palate with phenolic tension, peach and nectarine notes, powerful and long with a firm, clean, slightly chalky finish.
Food Pairing
Western: roast chicken, butter-poached lobster, grilled scallops, creamy pasta, smoked trout. Asian: miso-glazed cod, tempura prawns, Cantonese steamed fish, sushi (salmon/torched), Thai green curry with seafood.
Production Method
Hand-harvested biodynamic fruit; whole-bunch basket pressed; fermented in concrete egg, amphorae and biodynamic puncheons; matured eight months in biodynamic oak puncheons (80% new); bottled unfined and unfiltered under screwcap.
