Tasting Note

Bright lemon, preserved citrus, lime flower, dried pear and fig with crushed-nut and sea-spray minerality. Crunchy, saline acidity and a long lemon-sherbet finish, elegantly textured and intensely perfumed.

Western: roast chicken, crab, prawns, seared scallops, creamy pasta. Asian: sushi/sashimi, miso-glazed cod, tempura prawns, lightly spiced Thai or Vietnamese seafood dishes.


Production Method

Biodynamic estate fruit, hand-harvested to the biodynamic calendar; whole-bunch pressing, native fermentation and 6 months in 50% new biodynamic French puncheons; bâtonnage, no fining/filtration; sealed under screwcap.
