Tasting Note
Light straw with green hues; citrus, pear, elderflower, curry leaf, slate and sea-salt. Lively acidity, layered texture from skin contact and oak, dried pear and marigold notes and a long savoury, mineral finish.

Oysters and shellfish; seared or grilled white fish (Dhufish), abalone; mushroom risotto or creamy goat’s cheese tarts; roasted chicken with herbs; Thai green curry, lightly spiced seafood, sashimi and other delicate Asian seafood dishes.
Production Method
Biodynamic, hand-harvested; overnight skin contact; natural yeast fermentation; portions fermented in barrel and concrete egg; Sauvignon Blanc matured ~8 months in biodynamic puncheons (majority new); Semillon tank fermented.
