Tasting Note
Deep mulberry and purple hues; concentrated plum, cherry and mulberry with dark chocolate, cedar, rose and ironstone. Fine ripe tannins, juicy acidity and a long, saline-tinged finish.

Grilled/wagyu beef or ribeye, roast lamb, aged cheddar and other hard cheeses; Asian: Korean BBQ (bulgogi/galbi), Malaysian beef rendang, Sichuan-style beef, char-grilled miso aubergine.
Production Method
Hand-harvested on biodynamic fruit & flower days; varieties vinified separately with indigenous yeasts; matured 15 months in French oak (50% new) in barriques and puncheons.
