Tasting Note
Perfumed damson, cherry and wild strawberry with cocoa nibs and subtle earth. Palate shows rhubarb, cranberry, dark chocolate and maraschino cherry; fine grippy tannins and a long, dry finish.
Food Pairing
Western: duck breast or confit, mushroom risotto, roast salmon, roasted pork belly. Asian: miso-glazed fish/black cod, char siu or soy-glazed pork, Korean bulgogi, mushroom & soy stir-fry.
Production Method
Naturally fermented (indigenous yeasts) with ~50% de-stemmed and remainder whole clusters; minimal extraction, four weeks on skins; aged 9–10 months in 228L and 500L lightly toasted French oak barrels.
