Tasting Note
Light-hued red with bright strawberry and cranberry fruit, spicy/menthol notes, floral herbs, and soft chalky tannins. Energetic acidity and an ethereal, precise finish.

Food Pairing
Western: roasted chicken, grilled pork, charcuterie, tomato-based pasta, mushroom risotto. Asian: yakitori, bulgogi or Korean BBQ, char siu, mildly spicy Sichuan dishes, teriyaki chicken.

Production Method
Hand-harvested, lightly foot-trod fruit; native-yeast fermentation with ~20 days skin contact. Free-run and pressed juices combined and matured in a small number of barrels.
