Tasting Note

Bright red fruit—cranberry, pomegranate and Bing cherry—layered with raspberry, forest floor and a hint of coastal salinity. Energetic acidity, fine sandy tannins and a medium body with a lingering minerally finish.

Grilled salmon, roast duck, mushroom risotto, pork shoulder, bucatini all’amatriciana; Asian: miso-glazed salmon, teriyaki chicken, char siu, five-spice braised pork, ramen with pork or shiitake.


Production Method

Hand-harvested fruit; native and/or gentle fermentations; aged 9–10 months on the lees in French oak with a low percentage of new barrels; bottled unfined under screwcap.
