Tasting Note
Pale straw with aromas of green apple, white peach, key lime and night-blooming jasmine. Palate shows nectarine, Honeycrisp apple, orange blossom, flinty sea-spray minerality, vibrant acidity and a clean, mouthwatering, stony finish.

Western: seared scallops, crab, lobster, roast chicken, mushroom & asparagus frittata, creamy pasta. Asian: crab fried rice, sushi/sashimi, miso-glazed fish, Cantonese steamed fish, lemongrass seafood.
Production Method
Hand-harvested at night, whole-cluster pressed, native- and/or selected-yeast fermentation in stainless steel, lees-aged in tank, bottled unfined under screwcap.
