Tasting Note
Deep ruby with concentrated black-fruit core: cassis, blackberry and black plum, plus notes of menthol/mint, dried herbs, cocoa and cedar. Plush yet focused, with powdery tannins and a long, spiced chocolate finish.

Food Pairing
Western: grilled ribeye, roast rack of lamb, braised short ribs, aged cheddar. Asian: Korean barbecue (bulgogi), hoisin or five-spice duck, char siu, spicy Sichuan beef or beef rendang.

Production Method
Hand-harvested at night; cold soak and extended maceration; native and selected yeast fermentations; ~18 months in mostly neutral French oak with a low percentage new oak; bottled unfined.
