Tasting Note
Pale lemon with aromas of white peach, lemon blossom, fresh-cut herbs and passionfruit. Crisp acidity leads to a stony, subtly saline, chalky palate with layered texture and an elegant, crystalline finish.

Fresh oysters and shellfish; aged or fresh goat cheese; fennel, mint and citrus salads; grilled white fish; Thai green curry, Vietnamese aromatic seafood, sushi/sashimi, steamed scallops with garlic-soy.
Production Method
Low yields; ~10% hand-harvested. Parcels fermented separately in stainless steel, French oak puncheons and sandstone amphora; matured four months on lees; gently fined and filtered before bottling.
