Tasting Note
Fresh citrus and stonefruit (lemon, mandarin, peach) with oyster-shell salinity, chalky/mineral texture, subtle cashew/vanilla oak and bright, focused acidity leading to a refined saline finish.

Western: grilled or pan-seared white fish, oysters, seafood pasta, roasted chicken, creamy ricotta gnocchi. Asian: sashimi/sushi, miso-glazed cod, Thai prawn salad, light Chinese seafood stir-fries, Vietnamese spring rolls.
Production Method
Approximately 70% whole‑bunch pressed; fermented in French/Austrian puncheons, foudre and stainless steel; partial malolactic conversion; aged in oak puncheons (c.15% new) for 8–16 months.
