Tasting Note
Savory, elegant Pinot Noir: red and black cherry, raspberry, forest floor, chanterelle and truffle, lavender and subtle spice. Silky tannins, bright acid and a long, mineral-tinged finish.

Food Pairing
Duck breast with mushroom sauce, roast lamb, venison, mushroom risotto; Asian: miso-glazed salmon, char siu pork, bulgogi or Korean BBQ beef, shiitake tofu stir-fry.

Production Method
Wild (indigenous) yeasts, ~32% whole-bunch, fermented in open-top stainless and French oak cuves, aged 12–14 months in French oak barriques (≈30% new); lightly filtered/unfiltered; bottled under screwcap.
