Perfumed red and black cherry, wild berry and floral notes with pink pepper and porcini. Silky, sappy texture, fine-grained tannins and savory underlayers; long, lifted finish.

Western: roast duck, mushroom risotto, lamb loin, pork belly. Asian: miso-glazed salmon, teriyaki duck, char siu pork, shiitake soba.

Production Method
Hand-harvested single-vineyard fruit; ~70% whole-bunch fermentation, wild/ambient yeast, matured ~14 months in French oak (c.30–34% new); bottled under screwcap.
