Food Pairing
Western: foie gras, blue cheese (Roquefort), baked fruit tarts, tarte Tatin, roasted pork with fruit glaze. Asian: Peking duck, seared scallops with miso, spicy Thai curry, hoisin-glazed pork, mango sticky rice.
Production Method
Hand‑harvested, botrytised (noble rot) grapes; late-harvest pressing, fermented and aged in oak barrels (≈50% new), typically 12–18 months.
