Tasting Note
Golden, with candied citrus, pineapple, white peach, honey, candied ginger and vanilla; rich and unctuous yet lifted by bright Barsac acidity, finishing long and honeyed.
Food Pairing
Western: foie gras, Roquefort/blue cheese, seared scallops with vanilla-saffron beurre blanc, tarte tatin. Asian: Thai green curry, Peking duck, spicy Sichuan dishes (mapo tofu), mango sticky rice.
Production Method
Hand-harvested botrytized grapes (multiple passes), fermentation in oak barrels and aged ~18 months (significant new oak use), careful selection of noble-rot berries.
