Tasting Note
Concentrated blackcurrant and blackberry with notes of graphite, cedar, jasmine and dark chocolate. Silky entry that builds to firm, grainy tannins, vibrant acidity and an extremely long, mineral-tinged finish.

Food Pairing
Roast lamb, ribeye or beef short ribs, duck confit, aged cheeses; Asian: Peking duck, char siu, Korean BBQ beef, braised miso short ribs, mushroom hot pot.

Production Method
Hand-harvested; fermentation in temperature-controlled vats; matured ~18–20 months in French oak (≈55% new); bottled by gravity (bottled July 2021).

Château Cos d'Estournel, a 2ème Grand Cru Classé (1855) in Saint-Estèphe, founded 1811. Owned and restored under Michel Reybier since 2000; renowned for maritime terroir and structured, spicy wines.
