Tasting Note
Concentrated blackcurrant and blackberry with violet, graphite, cedar, tobacco and mocha notes; ultra-fine yet powerful tannins, pronounced minerality and an elegant, very long finish.
Food Pairing
Western: roast lamb, ribeye, beef short ribs, game, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), beef rendang, soy-glazed braised short ribs.
Production Method
Traditional Bordeaux vinification; hand-harvested, fermented in temperature-controlled vats, aged ~15 months in French oak (c.60–70% new). Bottled July 2018.
